In my first attempt, I only used 8 whole Roma tomatoes. While the sauce tasted fine, it wasn't enough for the amount of pasta. This time, I started with 16 whole Roma tomatoes, and it turned out so much better. I even added some Calabrian chili peppers to give just a bit of heat.
I decided to make my own tomato sauce from scratch. I used 8 Roma tomatoes, a white onion, 5 cloves of garlic, and 5 oz of baby spinach. I underestimated how much the sauce would reduce when letting the water from the tomatoes boil out. I probably needed another 8 or more tomatoes, but I'd say the flavor came out great. Overall not bad for a first attempt.
